Fish Tacos
Ingredients
- White fish (1 fillet)
- Taco Shells (3)
- Paprika (1tsp)
- Corn Flour (2tbsp)
- Plain Flour (2 tbsp)
- Carrot (Half medium)
- Red Onion (Half medium)
- Green Pepper (Half medium)
- Yogurt (1.5 tbsp)
- Mayonnaise (2 tsp)
- Lime Juice (1tsp)
- Mango (9 small cubes)
Recipe
(Serves 1)
1. In a bowl mix the cornflour, plain flour, paprika, and a pinch of salt and pepper
2. Cut the fish into small chunks and add this to the flour, so it's coated on all sides.
3. Finely cut the onion, pepper, and grate the carrot all into a bowl, add the yogurt, mayonnaise, and a little lime juice and mix it together.
4. Cut the mango into small bite-size chunks and leave aside.
5. In a frying pan heat a couple of tbsp of oil. Once the oil is hot shallow fry the fish on all sides, and once nice and crispy allow to rest on a wire rack.
6. Whilst the fish cooks heat the tacos in the oven for 2-3 minutes or as per packet instructions.
7. Add some of the yogurt salad to the tacos followed by the fish and more salad and top with the mango.
8. Enjoy!
